I know there were no locks on the door or anything, but how could someone possibly open the door to a Disney Princess room covered in pink and purple and NOT think about what they were about to do. I tucked myself into her Disney Princess sheets and held her Bell, Cinderella, and Aurora pillow tight. I curled up into a ball – because that is how I felt the most secure. I prayed to God for safety as I went to sleep.
Less than an hour later, I opened my eyes only to find him standing over me. He had a knife in hand. This was no ordinary knife though. It was this huge machete thing he had received from a friend as a gift. Even his pocket knife scared me. I was an idiot to let him accept a machete! I observed the silver shine it so clearly showed, and he began to speak, “Guess what I just did!” I examined the knife closer and noticed some sort of red liquid smeared all over it. It was blood. But who’s? He had been hanging out with our neighbor earlier that night. Maybe it was some poor homeless man that no one would think to miss, or maybe a helpless jogger on their nightly run. Suddenly I had began to wish that I hadn’t just decided to fall asleep in hope that I would wake up tomorrow to a better day. I should have known better. He would always wake me up while in his drunken stupor. And each time I would think of just how much I hated him and the things he would do to me.
With tears rushing down my face, “No, please,” I cried out, “What did I do? I was just asleep. I didn’t do anything this time. I was just sleeping!”

First and probably the most important difference is the school of knifemaking. Western or Japanese. It's a pretty long topic to discuss, but in short, western knives are thicker, heavier, made with softer steel, and thick edges. Japanese kitchen knives are thinner, lighter, much harder steel and much thinner edges.
To give you numbers typical euro knife will be 52-54HRC, even when they specify 56HRC, large knives hardly ever get up there, and edge angle on euro knife will be around 40 deg. total to 20 per side. BTW, those numbers are pretty much the same for high end and mid/low end western knives.
Japanese knives - 60-61 hrs is a standard for high end stuff goes all the way to 65-67HRC. Edges, 30 total(15 per side) and lower. I have a few with ~5 deg angle per side. That's quite a bit less than the straight razor.

So, in the end, Japanese knives cut a lot better and stay sharp a lot longer. However, euro knives can take a lot more abuse thanks to their soft steel. Simply put, if you use knives for their designated purpose then go with Japanese. If you want your chef's knife to cut veggies and chop coconuts, then go with Euro.

But cutting performance is nowhere near to that of good Japanese kitchen knives.
Anyway, you can, and should ignore 3 common knife myths when shopping for knives:
Forged vs. stamped - As knife marketing tells us good kitchen knives have to be forged, and have full bolster and tang. NONE of that is true. E.g. Stamped Globals are much better performers than most of the forged mainstream kitchen knives. Stamped Forschners are made from the same steels as Wusthoffs and Henckels and I'll bet 1000$ to anyone they won't be able to tell the difference neither in edge holding nor in cutting performance.
I bought Forged and stamped versions of the same chef's knife from Global, and I didn't get anything but extra weight and spent more money on forged knife.
Full tang - Another BS, Katana swords and bowie knives are not full tang, yet they can cut through armor and leather, so I really doubt you need more strength than that in the kitchen.
Bolsters make sense only on narrow boning knives to protect your hand from slippage, but on other wider knives blade choil area does the job, bolster just makes sharpening a nightmare.

Global, Sabatier, and Furi are all more expensive than Wusthof. I've used mostly Wusthof and Henkels, and both are very good-quality knives. However, when I was a restaurant cook, we had a knife service that brought in much cheaper knives like Forschner and Victorinox, and they cut just as well as the expensive ones.
Choose a brand that uses high-carbon stainless steel--regular stainless is almost impossible to sharpen and plain carbon steel needs extra care to avoid rust and discoloration. And beware the ceramic blades; they are alluring; they cut beautifully. But they are also very expensive, and if you drop one on the concrete restaurant floor, that is the end of the knife. It will shatter.
Other than that, the best way to choose a knife is to pick it up and see if it's comfortable in your hand. Do a couple of cutting motions with it. Is it too heavy or too light? Too long or too short? Well-balanced or pushing too far towards the tip or towards the heel? Whatever feels best is the right one.
Also, be aware that many brands have different-priced lines. The more expensive ones are usually forged (they have a thick metal bolster between the blade and the handle). The less expensive ones are stamped (they look like a flat piece of metal out of which the shape of the blade was cut). Forged blades are good for heavy jobs like cutting through bones or winter squash. But other than those heavy jobs, a stamped blade will cut vegetables or meat or herbs just as well as a forged blade.
Don't spend more money than you have. Get the cheap ones now and you can add to your collection as you make more money--and as you are more sure of which are worth spending more on and which don't matter as much. And I guarantee, if you stay in the food business, you will become fascinated with knives and start saving up to buy certain ones.

Before we start, I have to say that I'm a fairly mechanically inclined person and I can figure out how a lot of things work without instructions. I'm a finish construction worker. That said, I've never been able to properly sharpen a knife to save my life!!
I've had this sharpener for about 6 months now. I've read at least 100 reviews about it, even before I bought it. I'm sure they're all accurate, but what you need to observe is the amount of positive over negative. Certainly, since this is a manual sharpener, there will be a few people who are not able to make this work. The overwhelming majority, however, will.
After reading so many reviews, I decided to purchase the diamond and extra fine stones initially. I will say that in all honesty, this system is not complete without them. If you truly want the whole gamut, you must purchase these as well.
When I bought this sharpener I had knives that spanned from butter knife dull to pretty sharp. One of those knives was my first knife ever, a Buck knife my Dad gave me when I was 12 and that was 24 years ago. Just so you know, I've always been the person who could sharpen a semi sharp knife into butter knife quality. That buck knife is now twice as sharp as the day I received it! Really. I can now do a one pass shave with it.
If you own kitchen knives like Henckles or Wusthof then you are fool for not keeping them scary sharp. This sharpener costs less than one chef knife and it will keep it scary sharp forever. I do about 50 (25 per side) strokes on the corner and flat side of the fine and extra fine about once a month (Henckles) and it slices onions with no sting. For the un-initiated, the reason onions sting your eyes is because the dullness of the blade crushes instead of cutting. A truly sharp knife reduces the tears.
The best advice I can give is to just buy from a reputable seller and return it if you think it sucks. Spyderco has an awesome reputation and if it really sucks for you, they do have excellent customer service.

This is one of those products that actually works as advertised!! Well worth the investment. Well made, durable and easy to use. I've sharpened just about every knife I own and even sharpened those that were used as screw drivers with great results. The only drawback and it's no biggie, is that longer knives are a little harder to sharpen. What I've done is sharpen first the front half and then the last half. seems to work for me.

Crap, plain and simple.
The blade designs are pathetic, they don't work for 99% of the cutting you might do, the serrations are next to impossible to resharpen, the steel is run of the mill Chinese junk (they're made in China after all) for ten times the cost of run of the mill Chinese junk, the grips are impossible to use comfortably, they don't fit ANY human hand, the finger grooves are either too large to use or too small or just ridiculously shaped etc etc etc.
The absolute best Spyderco knife I ever held in my hand was a Maxam clone. Same Chinese factory, same grip and material, same blade and material etc etc etc. The thing that made it better than a crap Spyderco was that it was crap and made no bones about it. It's still crap, but at least it's not ridiculously overpriced crap.
Addendum to Pierre: I have the same exact knife in my hand right now. From the bottom working up....
The grip has the tapered palm swell part at the bottom and then the single wide "finger groove" just below the blade pivot screw. Sort of like a long, narrow pistol grip. The tapered/swell part *should* fit back along the center of your palm in a rapier-type grip....it doesn't. It's too wide to fit the hand. The "finger groove" just above it is then too wide for one finger but also too narrow for two....so you end up holding the taper/swell pommel area in your palm with the last inch and a half of grip sticking up out of your hand. The clip on the back is then digging into your palm and the entire grip is uncomfortable. It's a piss-poor design that started life as some freak's fantasy crap that a lot of folks bought into and choose to believe it's some terrific design that they lucked into finding but just haven't mastered yet.
Basically, it's a crap design that a lot of folks keep telling themselves is good. No one wants to admit it sucks and that they fell for it.
The *ONLY* comfortable grip on that knife is to hold the grip sideways, your thumb on the flat middle of the blade, your two middle fingers wrapped around the finger groove like you were using it to clean your fingernails. Sorta defeats the "police" knife concept, eh?
The serrated blade, yes, there are triangular stones designed to sharpen serrated blades on these things. The Lansky one I mentioned is a good example. I bought it just for that. It only fits the wide serrations, though, not the small ones. To sharpen the small ones, you would end up grinding them wider and wider til you had all wide serrations. Serrations are only on one side of the blade, too....and to use that triangle stone on them, you end up pushing what's called a "wire edge" over to the flat blade face. To remove it there, you have to use a flat stone....which in effect sharpens away the serrations. Serrations are thus impossible to resharpen. Yes, you can hone them once or twice....you can't resharpen them. When that blade was originally made, one face was ground first, the one with the serrations. That entire side got ground, the serrations cut, then the blade flipped over and the back edge ground off. It's the back edge grind that originally sharpens the serrations....but you can't do it because it grinds the serrations away. It's a catch 22 sort of thing. The only thing you're left doing is using the knife til the serrations go dull and then stoning a straight edge onto the blade which loses a lot of steel.
Blade design....
Blades are designed for a specific purpose. Over the thousands of years mankind has used knives, certain basic, "classic" designs have evolved and lasted. You have a two edged pointed dagger....a classic fighting knife. Narrow grip that fits sideways in the hand like a rapier. Thousands of years old. In fact, several found in Tut's tomb could be mistaken for modern fighting knives...same exact design. Hunting knives....what most folks today term "bowie knives". Single edged heavy blade with a curved tip. Used to do everything from clear brush to skin animals. Thousands of years old, too. A "skinning knife". Self explanatory. Small to medium knife with a curved edge. Even such modern stuff as a "pen knife" has a specific use intended in its design.
Look at your Spyderco and see if you can figure out what it's designed for? Fighting? Nope. Very poor fighting design. Skinning? Hunting? Opening letters and packages? Maybe. Fact is, it makes a very poor *anything* blade. It's fantasy crap passed off as a serious knife.
The closest historic design to that Spyderco blade is an old Norse scramsax blade....but the sax was designed with a straight grip that allowed choking up close on the blade for detail work. The Spyderco doesn't because the grip, again, sucks rocks.
The only Spyderco knife I still currently own/use, I removed the blade from the plastic grip and welded the blade to a half inch diam steel rod with an inch brass ball on the end. I use it for carving fine details in my staves and canes.
Steel....it's common China steel. Not bad, but not top of the line. I've seen far worse many times. (Gerber is the same) Any other China knife made from the same costs , not , though. So if you're paying for a cheapo Chinese Maxam identical to the Spyderco and the Spyderco is being made by the same folks as the Maxam....where do you figure the extra is going when you buy that Spyderco? Gold foil lining inside the handle where you can't see?
Here's a tip....by paying more for an item, you aren't making that item any better. You're just padding someone's pocket along the way.
If you insist on buying Spyderco crap, I'd suggest you buy that cheapo Maxam clone for off of Ebay and try it out first. Once you have, you'll probably never buy another Spyderco. Spyderco's market consists of about 49% cops and wannabes who think the name makes it good....and about 49% teenagers who think "if the cops buy this crap, it has to be good".
Sorry for the length. It's a topic I've talked on lots of times these past years. Always gets me going.

I have had one of the screws on the clip of my Tenacious come loose (one of the 2 'Made in China' Spyderco's), but as it was held in by three to begin with, it's still nice and tight with the remaining two!
I've no idea what randkl is talking about. I've met Sal Glesser (the founder and president of Spyderco) and handled most of their knives, and I'll tell you, they're some of the most functional knives in the world (they may look odd, but once you've used one you'll realise every part of the design is geared towards making it a better knife). Almost all their models are made in VG-10, S30V or H1 steel; truly excellent stuff, and on their best selling lines they can knock it out cheaper than just about anyone else!
I think the best thing about Spyderco is their relationship with their customers. They listen to them, meet them, discuss designs with them and make the knives they want to be made, even if it's a small market they're not going to make tons of money in(Wale Rescue Blade, DKPK, Jumpmaster, Bushcrafter, etc).
Seriously, buy a Tencacious, Delica or Native (three of their best selling, and cheapest knives) and try them for yourself.

if you are not trying to seperate them for protection (either for safety sake or to use the knives seperately) then you can go to a hardware store and get a utility pouch to carry them but if you want a case to keep them seperate in order to use differently then you might find a leather worker to make one to your spec.

I would go with the Spyderco Cricket. Although, they are used for different purposes, the cricket is a better all around knife. It is easy to carry because of its size and it is a great knife. I have a Spyderco Dragonfly, with the black handle and full serrated blade. I cut a lot of cardboard at work, and I am impressed at how well this knife has held up. I have never sharpened it yet either; it holds an edge well.
This knife should be in your price range, as it is a bunch cheaper than the one you have linked. I think you will like it, and be sorry if you buy a lesser knife.

If the knife is sharp enough to open an envelope, but not sharp enough to slice a tomato cleanly, then find some clean brown corrugated cardboard (the kind of box material used for packing small appliances) and rub the knife on the clean, unfinished side (usually the inside) of the corrugated. Hold the knife at a slight angle that approximates the angle of the existing cutting edge and take 3 or 4 strokes in one direction, then in the other, back and forth until you get the blade sharp. To go even farther, use a few layers of newspaper on a flat surface, and (with patience) you can make an edge that will shave you. A sharpening stone is faster, but it is astonishing just how abrasive paper products can be.

I've seen many an old timer sharpen his pocket knife by making a few swipes across the bottom of an old earthenware crock, and even on the rough-rubbed bottom of a glass pop bottle. Now days, it might be easier to find someone willing to lend you their sharpening stone or "crock stick" than it would be to find an old crock. And glass pop bottles.........??? Some of us alive today have never even seen one. Good luck there. But if you can't find either of them or a good friend with a sharpening stone, take it in to the local sports shop and hand it to the guy at the knife counter. Ask him to demonstrate the sharpening systems he likes best and recommends most. (They usually will.) Just be sure to thank him before you pocket the newly sharpened knife. And while he's working it over for you, check out how reasonable some of the offerings in his selection actually are. I'm betting there is something there that even you can afford. Prices usually start at just a few dollars and go up to some high dollar professional stuff that most of us will never own or even need. And as a last resort, remember there are professional sharpeners listed in your phone book who will sharpen anything from your razor to your ripsaw, and your kitchen scissors to your chainsaw. For the price, there are a LOT of folks willing to save themselves a TON of trial and error by just paying someone a nominal fee to do the job fast and right the first time. Best of luck choosing your best choice from all the options.

ANSWER:
Never never use anything like an Accusharp on a Katana, real or fake. If it's fake, it'll take off the nice finish on the blade, and may even reveal some impurities or other soft metals under the surface. If it's real it WILL scratch the shit out of the blade and may even ruin the Hamon if its a large enough sharpener.
Secondly, common kitchen sharpeners add a secondary bevel. This is not wanted for a real katana! Whetstone sharpening is the best and should be the only way to sharpen a real katana.
Sharpening a katana non traditionalls can also create a wave in the blade. Cheap sharpeners tend to do this mostly. It's slight, but its there.
My question to you is this. You know its a cheap katana replica bought only for looks and as a wallhanger.. Why sharpen it? Even if it were used in a home invasion defense or whatever reason you might want a sharp sword, it most likely would do very little damage to the opponent before breaking. Most katana replica's have Half push rat Tangs.. meaning that there's a tiny rod of metal welded onto the sword which is what goes down the Tsuka. These things I can break with my hand pretty easily, so even swinging them in the air is dangerous. The steels is probably just tempered 420J steel. Not very strong stuff.
Wallhangers are designed to be only that, you're far more likely to hurt yourself or some innocent bystander than any threat. Doesn't matter if you've been training for years in Iaido or Kendo, a wallhanger is most dangerous to the user.
